So how and in what order do these interact? Can I PC the newly-created 10? (And if so, what happens to the Opportunist tokens?)

Or can I only PC the 7?
I'd say no.
By allowing your opponent to use his Opportunist tokens, you are tacitly admiting that you will let the roll stand. After all, the feat makes specific reference to adding the tokens after the roll; if is said something like "during" or "while rolling", then there would be less wiggle room.
So, I'd rule the appropriate course of action to be:
1) Your opponent rolls a 7, you say, "You miss"
2) Your opponent starts to reach for Opportunist tokens
3a) You say, "Oh, if you are going to do that, I'll make you reroll and hopefully you'll crit miss or something." or;
3b) You don't do anything, let your opponent use the tokens to make the attack succeed, and take the hit

I wasn't trying to call out searching. I usually save that for when it's something that really comes up a lot. But both deputies posting made it sound like they were not 100% sure of the answer. But I remember when the card came out, this was brought up (though it may have been on ye olde WK site) - that's all I was saying.

Back to the seriousness. Another Opportunist question:
If I roll a 10, can I add 2 opportunist tokens to create a critical hit—with all the attendant benefits of a crit hit—as the new attack roll of 12 previously meant that one had rolled double sixes?

Using tokens from this card does not change the nature of the roll. Double ones is still a critical miss. You need to roll double sixes in order to get a critical hit (making the roll 12 does not make it so). Knock back occurs if the roll is doubles, even if you need to use Opportunist tokens to make the attack hit.
