So when you switch the stats with the pitot for the free action, on your next turn when you clix the pilot for the damage does the vehicle still keep the stats or do they go away due to the damage for switching the stats?

It isn't explicitly spelled out in the vehicle rules, but word from the top is that it is only supposed to last until your next turn.

So rule it as you will for now, but know that is the way it will appear in the PG.

Would it be frowned upon to use a token in place of the bug. I got this big ### thing, and I dont want to be forced to navigate it on a map. If I brought it and the card with me, do yall think a judge would let that fly?

You can't. Just talk to your venue's owner/manager and see if they will work with you to set up a program for clixing at the venue.
