so lets say you move into hindering terrain or at least behind. an opposing character moves up and attempts an attack with the sharpshooter ability. do you get the plus one to your defense or not? keeping in mind the line of fire goes through hindering.

Nothing in the sharpshooter ability ignores hindering terrain. So unless there's another reason why the hindering terrain would be ignored, the modifier applies as normal.
