Animal wants to carry someone, so he takes the Giant Stride ability from Beast Boy T Rex. Now Beast boy cant use the Carry ability due to his tiny little arms. But Giant Stride gives you the Carry abilty and some minor stuff agaisnt Plasticity,
Would animal Man get the full Giant Stride with Carry, or the hampered one that Beast Boy has.

Animal Template: Once at the beginning of your turn, choose a standard attack power, standard speed power, or combat ability that another character within 8 squares and with the animal keyword can use. Animal Man can use that power or ability until the beginning of your next turn if he can't already.
And this is the Combat Ability in question:
Giant Reach
This character ignores opposing characters' Plasticity and adds 1 to its d6 roll when breaking away. When this character is given a move action it can use the Carry ability. When this character is given an action that includes a close combat attack, all squares within a range of 2 and line of fire are considered adjacent. This ability can't be countered.
That's what Animal Man can use from Beast Boy. Anything else is not a part of the combat ability but is instead due to Beast Boy's trait. Animal Man is not using Beast Boy's trait.
(Please note, too, that Giant Stride no longer exists. Giants can use Giant Reach and Great Size).
Animal Man can steal Lockjaw and Hairball's or Dolphin Beast Boy's Move and attack...could Animal Man INSTEAD Choose to take normal Hypersonic Speed? I recall Inbetweener when he takes a power from a character like Metron he gets the original power with none of the drawbacks.

Oh, that's sneaky. So basically, you can choose to take Move and Attack, since the character has that, or you could be smart about it and just take a power that the other power lets you use so you don't have a penalty. Very clever.

My thoughts exactly. and while you can't gain Willpower as it's a defense power you CAN Gain Indomitable ability
