If I use Spider-man to copy Prof X's Ultimate X-men team and use it to get +1 against Joker, then copy Batman team and later copy Ult. X-men again, can I pick a new character to use Ult. X-men on?

No. When you declared Spidey's enemy to be Joker, you set his enemy as Joker for the rest of the game. Anytime Spidey copies Ult. X-men from that point on, it'll only work on Joker.
Is there a ruling somewhere that clarafies it? I beleive you, I'd just like to understand why it works that way.
It says so in the TA description:
Ultimate X-Men: At any time during the game, choose an opposing team or character for this team member; once this choice is made, it may not be changed. This team member gets +1 to its attack value against the chosen team or character.
Spider-man is still "this character". Doesn't matter how many different TAs you Wildcard.
Cool man, I had a judge tell me otherwise, but your reasoning makes sense. Don't think I'll be able to convince him, but that's life. Thanks for the help.
