As long as the egg is face up on the field, it will not be removed by card of sanctity. However, if the egg is your only card, I would say that you cannot activate card of sanctity because you cannot pay the cost.

If Miracle Jurassic Egg is the only other card you have besides Card of Sanctity, you could not activate it since the cost could not be fulfilled. You'd have to have one other card to do so.

However, if you have another card(s) in your hand and/or on the field, you could still use Card of Sanctity.
