Does a Flying chracter with Hypersonic Speed:

1) Do they spend 1 square of movement when picking up/setting down another character?

2) After the character attacks and begins to move the remaining # of squares they have left, may they pick someone up? Or after attacking can you only move yourself?

1) No. They do not spend any movement when picking up or setting down a character. The character just needs to be adjacent to the flyer at the start of the flyer's move.

2) No. To carry another character, that character must be adjacent to the flyer at the start of the flyer's movement.
