So what does "after resolutions" mean here? Do you move at the end of the attack action or are you moving at the resolution of shape change? Could i move a skrull sidekick out of range or into stealth to invalidate the attack?

At the end of the action that triggered Shape Change, for better or worse, it seems.

"After resolutions" means after the current action had fully resolved and is over. If he current action triggered a Shape Change roll, it must have been an attack. So the sidekick will not get his Sidestep until the attack is finished. If the Shape Change succeeded and there are no other targets available, that would be almost immediately. Otherwise, it'll be after the attack roll and the dealing of damage, if any.
