Because the new Telekinesis rules say that if you try to move a figure that is adjacent to opposing figure, you need to roll for breakaway. When you carry a figure that is adjacent to opposing figure you don't need to roll for breakaway. Now someone might get confused that since you need to roll for breakaway with TK, that the same applies to carrying. Which it doesn't. I believe that is what tidge meant when he "blamed the new TK rules".

Outwitting Flight won't stop them from carrying. Flight and Carry are two separate mechanics granted by the symbol. You can't Outwit them both with one regular Outwit.

Hmmm if I outwit the flight ability only, the P/T figure can still break away and carry the figure? I thought once you outwit the flight ability, the P/T would gain the and then cannot carry the figure, right? the only figure that can break away free is the P/T figure. right?

Wrong.
The wing speed symbol allows a character to use the Flight and Carry abilities. Outwit can counter a single ability. It does not alter a symbol. Outwit can counter Flight or it can counter Carry or it can counter Phasing/Teleport, but it does not change the wing speed symbol to the boot speed symbol.

A figure with the flight symbol has two separate abilities. The flight ability which lets you ignore characters during movement, and the carry ability, which lets you.. well, carry.
Let's remove Phasing for now. You have a flier who is adjacent to a friendly character that is next to opposing figure. If you Outwit the Flight ability, the "flier" can still carry the figure that was adjacent to an opposing figure, only this time the "flier" can't move past opposing figures.
Now if you have a Phasing flier, Outwitting the flight ability will do you no good (because the "flier" can still move past opposing figures thanks to Phasing). Outwitting the Carry ability will prevent the flier from carrying the other figure away.
Outwitting abilities does not change the combat symbols, and doesn't change what abilities are given by each combat symbol. The Crosswinds Feat gives all figures with the flight symbol the Earthbound power, and since that power alters all the combat symbols into normal symbols, it also removes the abilities that come with the flight symbol. Outwitting counters powers and abilities (other than team abilities), but does not change the combat symbols.
