1) I have Stealth, I'm sitting in Hindering, enemy with Outwit is adjacent. He can't outwit my stealth (or any other power) because even if he's adjacent, stealth still hides him from outwit?
2) Perplex is indeed allowed to be used on Sentinals
3) Figure with Stealth sitting on edge of building as well as Hindering terrain. Range Combat people can't see him obviously, but can Leap/Climb person on the ground below? I assume yes, but wish to make clear.
4) Same guy from #3, if a Sentinal is on the ground below, is he technically now adjacent, hence being able to attack (close combat at this point)?
5) Finally, somebody I play against wants verification even though I showed him the passage from the FAQ. If you have outwitted my CCE (or whatever) and then another character of mine then outwits your outwit, don't I immediately get my CCE back?

That's absolutely correct. Outwit requires Line of Fire regardless of adjacency.

Yeah - here's the immunities from the Sentinel rules:
1. Cannot be affected by Force Blast, Incapacitate, Mind Control, Plasticity, Poison, Psychic Blast, Shapechange, Steal Energy and Support.

Yes - the Leap/Climb figure can make close combat attack him as if he were adjacent.

That's a tricky one - but yes. Here's the passage I'm using to make that decision:
Soaring figures and figures on elevated terrain can make ranged or close combat attacks against this figure per the standard rules.

Yes. Here is the ruling again in case you need more hard proof:
If a figure loses or "turns off" Outwit for any reason, any power currently being Outwitted is immediately re-activated.
