Where can I find definitive written proof that destroying an object leaves no debris?
The Fan4 rulebook says. "Use the rules for destroying blocking terrain" in a nutshell, and the rules for blocking terrain state that when blocking terrain is destroyed it leaves debris.
The judge will not change his mind on this unless I can provide written/errata/something proof that objects do not leave debris.
I know he's wrong, how do I go about proving it?

No they don't.
Page 11:

Destroying blocking terrain. A square of blocking terrain
can be destroyed by an attack that deals at least 3 damage in a single
attack. When a character attacks blocking terrain, the attack automatically
succeeds. An attacker can’t target both a character and blocking terrain
with the same attack. A close combat attack can be used to destroy a
square of blocking terrain adjacent to the attacker. A ranged combat attack
can be used to destroy a square of blocking terrain by drawing a line of
fire to the center of the square of blocking terrain; the line of fire is not
blocked by blocking terrain in the target square
There's nothing at all in that section about debris.
The next, completely independent section discusses debris.

There is no errata, if that's what you are asking.
Basically, destroying objects refers you to destroying objects on page 11. However, debris markers are discussed in separate (those, admittedly, related) section on page 12.
Those two distinct sections (and the lack of a reference to the debris token section on page 12 in the object discussion) are the reason objects do not leave debris tokens.
Debris markers. When a square of blocking terrain is destroyed, put a debris marker in the square; this marker represents the rubble left behind by the destruction of the blocking terrain. A square of destroyed blocking terrain marked with a debris marker is hindering terrain, not blocking terrain. If a square of blocking terrain that contains a boundary line is destroyed and it is adjacent to a square or squares of blocking terrain, the boundary
line is assumed to move to the nearest adjacent square or squares of
blocking terrain so that all squares of blocking terrain are contained within
a continuous boundary. In some cases, this might result in two separate areas of blocking terrain.
The above paragraph is where his argument is. He says "use the rules for destroying blocking terrain, when its destroyed leave rubble"
Unless I can find something that states in writing in the rulebook or eratta that contradicts this he won't budge as he says he's ruling by the book

He's wrong.
The rules for destroying an object point to the section on destroying terrain. The other section is a different section.
You won't find errata because it isn't necessary. The rulebook states what it does...no more no less.
This was very close to a questioned that I had, in my locate tournament. When a couple of gentlemen ask me a question about it. Objects do not leave rubble. I think what he is confusing is that destroying the object is the same as destroying blocking terrain, but blocking terrain leaves debris, while objects do not. I wonder if you were at that tournament Morand.

If the judge is still not coming around, it may help to have a copy of the FF rulebook with a copy of the Legion rulebook. In all previous versions to the FF rulebook, the rubble paragraph is clearly subordinate to the paragraph about destroying blocking terrain. With the FF rulebook, both headings have headings that are the same size/style/font, indicating that they are not subordinate and therefore, something referring to the rules of "destroying blocking terrain" only refer to the one paragraph, not the other.
Of course, if your judge insists on his way, make sure you bring rubble tokens with you when you destroy Trigon's Doppleganger tokens.
As I know was the case with you, I'm surprised to see it's as seemingly un-pinned down as it is in the rules and not even an issue of note in the Errata. I expected to easily find a clearer statement as it was such a strong (and welcome) change when it came through and Stealthed characters no longer remained hidden when the object they were hiding on/behind is destroyed.
