If I have both Super Senses and Probability Control, can I make the Super Senses roll first, and if I fail use Probability to make the re-roll it, or do I have to use Probability Control first if I'm going to use it?

Super Sense cannot trigger until after the Attack Roll has been finalized, which is after any re-rolls are made.

No. Probability Control happens during step 2 of the attack sequence. Super Senses is triggered during step 3.

PROBABILITY CONTROL Once per turn, you may reroll a target character’s attack roll
or break away roll. A targeted character must be within range and line of fire, minimum range value 6.

SUPER SENSES When this character would be hit, you may roll a d6. [5] - [6] : Evade

Okay, let's take those and then look at the Attack Sequence. (p13 in the 2017 Rulebook)

1. Determine targets
2. Calculate attack total
3. Determine hits
4. Calculate damage dealt
5. Damage sequence
6. Knock back sequence
7. Resolve attack

PC would be applied during Step 2. Super Senses would be applied during Step 3. They must be applied in that order.
