I've had success another way:

Defiant
Independent Flagship (Dominion)
James Kirk
Cheat Death x3
Quantums
Sulu

Kirk's wingman was Picard on the Excelsior with Spock, Scotty, Lojur, and Quantums. Surprisingly the Defiant was still the first target, but a very durable target that won OP5 for me. A tough little ship, indeed.
