sorry to say i have no advice on a sidedeck, as i don't actually use one, in my opinion if your deck isn't good enough to beat another then unlucky...
anyway...

now i know what you're thinking but i'm not insane (or am i?... MWAHAHAHA!!!), you see, sangan's effect is probably not going to be of too much use to you in this deck, why? because no matter what you get, your opponent knows what it is... u get morphing jar? they counter it... same with cyber jar or whatever. now i know it could make for a good bluff but as bluffs go i don't think this deck can afford to bluff.
d.d. warrior lady, whilst an amazing monster, is ultimately not necessary in here. i know as field presence goes she can't be beat but still, she's attacked, she's removed, how u gonna tribute her then? lol
gigantes i love, i once ran 3 ("eek" i know) when i was still a n00b (the good old days) and i think it's a great little surprise to spring but i just don't think 2 is right, imagine getting 2 in your first hand and no earths... it's possible. besides, gigantes is sorta bad hand management, hence my next suggestion....

giant germs!!! ZOMFG!1! not too special i know but when you think about it a good idea in here, same swarming effect of nimble momonga coupled with a little bit of burn damage, which is always nice... also, obviously, more tribute fodder for the almighty golem.
i gotta tell ya, i'm thinking the spell line up is spotless at the moment, lacking a few staples but that dosen't matter, especially in this deck..... good work
traps... hmmmmmmm... all i'm gonna say is
- bottomless trap hole
+ dust tornado
2 dust tornados should be much better that just 1, that way when you have ur golem your not waiting for that dust tornado to take out their bottomless, book of moon etc. cos u already have it :) also, bottomless in my opinion isn't as useful as it once was, especially because of it's 1500+ restriction

I have run with Giant Germs in the very beginning, but that was when I ran a heavy equipment build. You are right, the Gigantes can be a first hand disaster. But there are time when they are the blessing of the day. Now that I have refined the build with less equipment and more towards a more balanced spread of support and monsters I will re-visit the Germs to see how they might fit back into the fun. I agree with your view on the Sagan as not being a very good surprise tool. I tend to use it as a tech fetching tool in a crisis. It presents a threat. They know if I get my Sagan into the graveyard I get to fetch a new criter to respond with. They know that I can custom select to a more suitable monster for this situation or the upcoming situation. Frequently, I want to broadcast what I intend to do so that it creates a warning or decission on their part. To a degree this is a stall deck where you paint a obvious picture and progrees to your goal. They have to work around it. Time can be my friend.
As for DD Warrior Lady, I like being able to search for her as a solution to the current situation with a Sagan. I have thought of putting in some Giant Rats and replacing her with Legendary Jujitsu Master. As I have said before there are so many ways to build this deck that make good sense, but so little space in a deck to put it all into. The meta can really swing the way you build.
I play VS-System (Marvel/DC) a lot as well as this game. In that game we do not have side decks. So I tend to try for the "One build plays against them all" way. But I have found that side decking is not to be under estimated in Yu-gi-oh. I personally don't like 'side decking. But I wanted some advise on the subject since it is one of my weaknesses.

Good point. I think I will update to add the Dust Tornado. I was vassolating on a way to do that and you found the way.
