Also tired of being sick or having sick wife and kids.
I took Monday off and took oldest kids to see Rogue One. She loved it and now going to watch the rest of the SW movies, excluding the Ewok movies and the Holiday Special.
New order in which to watch the movies:
R1 (ep 3.999)
ANH
ESB
TPM (Only for Kid)
AotC
RotS
RotJ
TFA
EP Ocho - RIP Carrie Fisher

Fixed that for you.
TPE - the Phantom Edit - the remix where Jar-Jar is essentially all but removed from the movie.
Really - you want to waste time on the pod racing stuff? It was fun, but is 100% non-relevant to the rest of that movie, much less to the rest of the entire franchise.
And the less we talk about midichlorians, the better.

Kid is 10 and would probably enjoy it. (There is no way this does not get the standard LPC treatment)
Oherwise I would definitely do TPE and still might, I have 2 movies to watch with her before I decide.
Envious that you have all of that in front of you to share with her ... it would be fun to watch someone of that age watch all of this for the first time.

I remember the first time I showed Star Wars to my oldest son. He was about 5 years old. He watched it and said that when he grew up, he wanted to kill the white people.

Okay, I'm not super into Star Wars, but why do you watch the movies out of order? Why not 1-6? What is the significance?

It's called the Machete order. It's supposed to be the perfect order to watch them in. You start with IV and V to introduce you to the universe, watch II and III for some backstory, and then finish with VI.
Numero Uno, the Movie that Shall Not Be Named, is considered to be unnecessary.
And of course no one knows where the f**k Rogue One or Episode VII fits into all this...

Well, you watch VII last, and you watch Rogue One either after III or before IV.
I think Rogue One might actually cause me to switch from the Machete order to chronological, because I think III-Rogue One-IV will actually flow pretty well.
