I'm a huge anime fan as well and I'm loving Fullmetal Alchemist: Brotherhood right now. I liked the original Fullmetal as well but I think Brotherhood's story is alot more tight and entertaining. Bleach is also a favorite of mine.
I really loved the first one and didn't think a second rendition would outdo it but Brotherhood has been amazing. It shows us a bigger layout of Amestris and the neighboring nations...especially with Fort Briggs and the ever so lovely General Olivier Armstrong I agree with you on the story...they have given us so much more depth and the action is on a higher level.
I watched the first three seasons of Bleach and after the Bounts I got lost with the story. So I am about 100+ episodes behind.
I'm not a fan of anime. Dunno why, but I just don't really like the animation and none of the premises really interest me.
I've said it before, but I'm not an anime fan at all either. Every time I try to watch one I get five or six episodes in enjoying the show, then I get very quickly bored and angered by the repetition that seems to find its' way into every single one. Maybe I'm crazy, but watching a guy yell "spinning sword ultra jump attack!" (or whatever) over and over again does not make for compelling action.
To be fair I haven't put that much effort into the genre, largely because I've known a couple of people who were "that kind" of anime fan who really turned me off to it, but I suppose I don't know why I should have to.
Edit: I should clarify that there have been a few anime-esque video games that I enjoyed. I loved Persona, for example. I thought the animation worked, the story worked, and aside from the voice acting the sound design was really interesting. I've just never met an anime I liked, and very few manga where I could tell what the hell was going on.
