Not so much caring if they do or not, but more taking pride in my work and keeping the game moving as smoothly as I can given real life.

The idea, as I understand it, was that we'd try and have mods alternate their open days between Monday-Tuesday, Wednesday-Thursday, so that there was less games closed on Tuesdays and Thursdays, and more games that were open throughout the week. This would serve to help with both participation, and keeping someone from being in 5 closed games.
Your argument, as I understand it, is that people whine if you delay a game until a Tuesday or Thursday. My response is: They do that anyways, so who cares? Do it.
If any of that is wrong, please tell me, but that's just how I view it. I don't want to get all hard-### about stuff, especially concerning a game, but people kinda treat this like it doesn't need any organization at all in order to maximize everyone's fun. It does.

I think there's a benefit in starting a game with coordination, but short (or no) day phases throw off any attempt at streamlining.

And I would agree with this, too.
Neither of these points have anything to do with not doing things for the sake of whining, however.

I think opening the initial day phases can be coordinated like that just like I've been making an effort to play in more games and space out my modded games more so that I can help the ratio of players to games a bit, but not everyone is doing that.
My argument was that once I open a game, I try to keep as close as realistically possible to the 24 hour phase schedule. I do this to keep the flow of the game going. Nothing is worse than a game that's been closed too long and you've lost interest. So once my game has started, I don't really pay attention to what other games are open when.

Well now, that I agree with. I mean, if you're like anyone else, you just throw up stuff when you have the opportunity to do so. Nobody can fault you for that.

That. Sucks.
Speaking as someone with hypoglycemia, specific diets get to be something you can get used to, though (although, mine's easy. I just need to eat stuff that's awesome, regularly). Your kid is 3, though, so it will maybe be easier on them, growing up with a particular diet in mind. Stuff like this is always hard on parents, though.
