After watching this video again, I wonder if my mistake is the meat I used. Instead of 80/20 I used 90/10. It may have not had enough fat.
You can mitigate that by adding butter to the griddle. I am sure that would not bother you. YOu may also try adding some bread crumbs under the patty when you first place it on the griddle. Panko may work better.

I did have a butter patty below each meat ball before I smashed them. Adding bread crumbs is an interesting idea. However, both of those suggestions don't fix the issue that I am having.
The first side turned out great. Nice and charred and sealed. When I flipped, however, the patty didn't stay flat, so only the outside ring of the second side browned up. I'm trying to figure out how to keep it flat after flipping.

You can make a cut as the radius of the burger unless it rises in the middle like a volcano, then you just smash it again. Beyond that you need to cook the smash burger 75% on one side then flip it over for a quick sear before you serve it. IF you want to get all into actual products to buy there are flat irons that are weighted well that you lay on top of the burger to keep it flat.

I worry about keeping it cooking on the one side will burn the first side. I do have a cast iron bacon presser that I am thinking of using for round 2 - but it could only flatten one burger at a time.
Must try one of these smash burger things. plus the panko thing sounds intriguing anyway.
Spent a good 4 hours with customer support either on chat or over the phone this week after changing our service. Other than about the first 45 minutes, it has all been to get one single network that was SUPPOSED to be on our package in the first place. It is still locked. Of course it is the 7 yr old's favorite network, so it is obvious if it is not working.
Finally started Stranger Things Season 4 after finishing Doom Patrol Season 3, and am almost done with 5th episode. I love it. Different than any other season, but that's ok.
Finished Stranger things Season 4. What's next? Finally tackle The Boys? Umbrella Academy S.3? Moon Knight? (That's the leading contender right now) Something else entirely?
