I've had several fresh and salt water set ups over the years. If it's for your kids, and you're looking for low maintenance, get some Bettas. One per kid or just the one if it's just for one of the kids is fine.
The whole set up is probably under $20 and you just need to make sure you feed it once every day or two and change the water once a month or so. Also make sure you use RO/DI water (or buy a little bottle of dechlorinizer).
If you want to get something you can enjoy too there's a lot of stand alone salt water sets now such as the bio cube and what not. I had a bio cube about 5 years ago but I donated it a few years back after my heater malfunctioned and nuked the fauna.
The salt water set ups aren't much harder than the freshwater ones (though the chemistry is a little more complex). I'm sure you could handle it and the difference in aesthetics is night and day with Saltwater tanks being way cooler and diverse.

No sweat, lmk if you have any more specific questions. A freshwater set up may be cool because it gives you a few options and is a good intro into the hobby. I am sure you can set something up in the $50 range.
Let me warn you though that with any fish tank, the key more often than not, is patience, and that is something that you may have a lot of in your party cause I know your kids are small. I.e. You will need to set up the tank, let it cycle at least 4-6 weeks or so before you introduce fish, etc. The natives may well grow restless during that time.

Hmm, so I'd probably need to go shopping this weekend for a tank/filter/stand and such to get the rig up and running. I've read that some breeds of fish you can introduce after only a week or two so those could be a stopgap if the natives get restless. They'll definitely wait until Christmas to get really restless though, so setting up the tank now could have them happy and even placate them. Maybe. Wishful thinking.

What a great conversation. I've been looking into getting a freshwater tank. Haven't decided yet if it's a good idea or not given the playfulness of my kitty. I mean, even if she does end up killing them all I'll probably just look at her all starry eyed as usual and say "she's so cute" like I do 20 times a day. Thankfully, everyone who matters also thinks "she's so cute".
Thanks for the input. I definitely want something easier to maintain as far as PH/temp and whatnot. From the little reading I've been able to to, it seems like I want hardier breeds of fish and a larger tank. Your advice falls in line with that. I just hope hardier breeds are synonymous with pretty and fun because those will be my kids' criteria. I can't even play WoW without getting out my shapeshifting Bear druid and Molten Corgi pet when they're around.
I'm torn on the wanting it to die off quick. On the one hand, I don't enjoy chores and such. On the other, this will be a decent cash outlay and I'd like to teach my kids some responsibility. I'd like to get my money's worth from the tank/filter and such.
Get some black mollies. I think kids would like them because if you stick your finger just at the top of the water they'll come to investigate/taste. It's kind of adorable.

I texted my brother as soon as it happened - after a game full of Cowboys penalties (often borderline/away from the play, like the INT that was overturned), it's ironic that they didn't call a pretty clear roughing the passer.
Honestly the Vikings D was the only unit out there that deserved to win. Everybody else ranged from mediocre to awful.

Nope. My cats would likely put them on my bed while I'm sleeping, so that I could wake up to pain and injury.
One, in particular, would probably purr while it was happening and then go curl up at my wife's feet like he's a good cat, and somehow plant evidence that I had fished out the piranhas myself in the middle of the night.
He and I have that kind of relationship.
