If line of sight goes through the diagonal of two figures like so, is it clear? I know if this were blocking terrain, the line would be blocked.

Can you perplex defense of someone being healed? Or is this considered "modified"?

And can soarers carry other soarers?

Yup, you have clear LOS in this instance.

No, you cannot Perplex DV on a healing attempt.

Soarers cannot carry other soarers.
it is true that a Flyer can carry another Flyer but not if they are both soaring.
The rules state What does work though, is a flying figure with Telekinesis. Two soaring figures would be adjacent, and TK can push them 10 squares away. The other figure would still be in soaring mode when the TK is done though, so you may have to look for a flyer with Running Shot as well.
