Quick question about hindering. Say my figures is sitting in a row of hindering, but a few squares in front of me is another set of hindering. If my attackers line of fire passes through both does that give me a +2 to my defense?

No. It could pass through 17,186 squares of hindering, you'd till only get a +1 to your Defense

I don't believe "another set of hindering" even exist. Hindering is hindering, if it's forest or debris, it's the same.

I think he meant another set of hindering squares. Where line of fire would cross hindering, then clear, then hindering again.
