I read it as simply saying that if she attacks with an object increase the damage dealt by 1. No where does it state only if doing a ranged attack or a close combat. So if she hits you with an object increase the damage by 1.
So... Red She-Hulk's printed damage is 4. If she uses the Tank Turret, that would give her +3 damage to equal 7 damage. And Red She Hulk's 'Stronger Than Jennifer' power would increase the damage an additional +1? Giving her 8 damage? Am I understanding this right?

Yes. The damage VALUE can only be modified by 3, but the damage DEALT can be modified further.

Played a FI sealed where objects were disallowed since they where not part of the tourney pack. This made super strength a pointless power (red she hulk still does well). Special objects I could understand them being left out. Regular object come in the starter packs with the rules as well so most people have them.

That's an odd one. The standard rules for Sealed have never allowed anything other than standard objects, but I've never heard of standard objects being restricted for Sealed (and I've been listening a long time.)
I wonder what the thinking was behind that house rule?

There might be a rule sheet that does not state that they are allowed implicitly. There were a few other rules quirk that I ran across last night as well. I have not played many games in my time collecting but I understand how powers work from watching game videos and reading the realms. Rules arguments can happen when things are not explicitly stated but also when the rules are too wordy. I would like to see more examples in rulebook going forward. I was prevented from breaking away to charge as well. I am thankful the venue is available for play however.

So either the venue never allows objects for Sealed, or they made this rule for FI for some odd reason.
