Does that mean his unmodified value (because it doesn't say that, or is it already implied?) or can we Perplex the damage?

I'm fairly certain "printed" means the number printed on his dial. Perplex doesn't change the number as seen on the dial, so perplexing his damage wouldn't affect the outcome. This strikes me as a similar question to Energy Explosion and "printed " versus
"may use Energy Explosion as if he possessed so-many 's".

Printed means the number physically printed on the dial.

If it had said "unmodified", then the value could have still be replaced (in theory... though I am at a loss to come up with a scenario off the top of my head). By specifying "printed", the value can't be replaced or modified.
