If the card you draw in your drawfase is a normal monster, you can put the monster in your hand and draw another card. If that one is a normal monster as well, draw another one... until you draw a non-monstercard.
I'm not sure what the ruling is when you have 2 HotU on the field but I think it's just the number of monster cards times 2. (this adds up very fast in a 90% normal monster exodia deck)
When you have more than one in play it becomes a bit more complicated.
However, to sum it up. If you have 2 copies active and you draw a normal monster and show it to your opponent, you draw 2 cards. It doesn't matter what the first card is, but as long as the last card you draw is a normal monster, you can activate them both again.
So here is an example:
You have 2 HotU in play and you draw a Mad Dog of Darkness. You show it to your opponent.
Draw 2 cards.
First card is Exodia the Forbidden One
Second card is Left Arm of the Forbidden One
Since the last card was a normal monster, show it to trigger HotU again.
Now if you drew those 2 cards in reverse order, Arm first and head second, then you would not be able to trigger the HotU's again.
Same thing works for three copies. Draw 3 cards and if the last one draw is a normal monster, trigger HotU's again to draw 3 more cards.

This one is trickier.
You have two "Heart of the Underdog" face-up in your Spell and Trap Card Zone.
You activate "Jar of Greed." Your opponent does not respond.
When it resolves you draw "Dark Magician." This satisfies both "Heart of
the Underdog," so you can activate both of their effects. Their effects form
a chain.
Heart of the Underdog [1] --> Heart of the Underdog [2]
Now, going from the previous ruling on HofU you know that you can reactivate
the effect of HofU if you draw a Normal Monster. That works very easily when you
have only one copy.
But when you have TWO copies you have a timing problem. Due to the resolution
of the chain, the very last copy of HofU to resolve is the one you will want
to have draw the Normal Monster. If one of the first copies to resolve gets a
Normal Monster and the last does not, you will miss the timing. This is because
the card drawn from each is a seperate draw. (Different then drawing with
Reckless Greed)
Using my prior chain:
"Heart of the Underdog [1]" (You want the Normal Monster drawn here) -------->
(because) "Heart of the Underdog [2]" (if it is drawn here you will lose timing)
Let's say, using my chain, when I resolve my chain that I draw a "Dark
Magician" with HofU [2] and a Dark Magician Girl with HofU [1].
Because the last thing to resolve in the chain is me drawing an Effect
Monster (Dark Magician Girl) I lose the timing needed to activate both
copies of "Heart of the Underdog."
Now let's say that I draw a "Beautiful Headhuntress" with HofU [2] and
a "Mega Thunderball" with HofU [1]. In this case the last thing to resolve
in the chain is me drawing a Normal Monster Card, "Mega Thunderball," so
I am able to show it to my opponent and activate both copies of "Heart of
the Underdog" again.
You will note that even though I drew two Normal Monsters I will still only
get to activate the effects of my "Heart of the Underdog" once. (so I draw
2 cards, not 4)
Even messier, three copies of "Heart of the Underdog."
Heart of the Underdog [1] -> Heart of the Underdog [2] -> Heart of the Underdog [3]
Drawing a Normal Monster when I resolve HofU [2] or [3] doesn't help me. It is
[1] that is all important.
Due to this... communication on which of your Heart of the Underdog resolves
last is VERY important. You really need to work with your opponent to get
the chain understood so its resolution is not an issue.
Both players can easily become confused.

hahaha, I've been playing the other way this whole time!! ahhhh! Oh well, that's good news for me then. Exodia here i come. I've always heard that it was just 1 draw and thats it. Thanks.
