After reading the power a few times, I think it will be a single character. As it does state "When Kate Pryde moves through an equipped opposing character,"Not characters.
I think she can effect one character per movement.

It seems to me that it would trigger every time she moves through a character. That would mean that if she moves through multiple (equipped) characters on a single move, then the power would trigger each time.

It triggers for each character she moves through.

It would be a single die roll to determine the outcome for all characters moved through, correct?

No. Each one is a separate trigger.
