What happens if you have a character with barrier and 2 targets, such as pyro? Can you create 2 different complete 4 square barriers? or 2 seperate 2 square barriers???

No. The lightning bolts indicate how many targets a character can attack with Ranged Attacks. Barrier is a Power Action, not an attack. Even though Pyro has two lightning bolts, he can only make one Barrier.
