If I have jenn kale's power to use nexus and someone outwits her prob, does she lose prob from nexus? If I have charge with red she hulk and skadi's hammer on her which also grants charge and someone outwits her charge on her dial, does she still have it?

you only outwitted that one source, so they would still have charge from the relic.

Same with Prob. Theres another source youre getting that power from. You dont posses it but the Nexus does. It doesnt stop you from using that power in general. Only on your dial
