So am I correcting in assuming that with Prof X having Mind Control and 3 targets that he can target three opposing characters with Mind Control at once?
should be feasible, only issue is that mind controlling all of them at the same time means they all become friendly to each other, then meaning you can't have any of those three attack each other, otherwise they're available to attack any other figs your opponent has that aren't mind controlled.

The first character you give an action wouldn't be able to, but the second character would be able to attack the first character, and then after that action the third character would be able to attack either the first or second character.
Give this character a close or ranged combat action (minimum range value 4) that deals no damage. A successfully hit target becomes friendly to your force. Each target hit may be assigned one action as a free action, immediately after which the target becomes an opposing character again. Deal this character 1 unavoidable damage if the successfully hit targets’ combined point value is 150 points or more.
After you give an action the character is immediately opposing again.

Correct.
Each figure affected by the Mind Control will be friendly to your force. Assuming you successfully Mind Control all three, they would each need to be given an action (or not be given an action) before the Mind Control can be resolved. During the Mind Control, each figure given an action and resolving it will immediately become an opposing character again.
This means you could Mind Control 3 figures. Have 1 move adjacent to another one. That one becomes opposing, so the second one could attack the first. The second one is now opposing, so the third one could attack either the first or second affected character.

Is the same true of mind control? If I make a successful mindcontrol against all three, can I chose to just default on any of the successful MC'd targets, rather than giving them actions?

If you successfully hit all three then all three become friendly to your force. You can choose not to give them actions (in which they will return to their original team), but you can't choose not to make it successful. So all three will still total up to see if the Mind Controller is dealt damage back.
