Can figures in stealth be outwitted if the outwitter is adjacent to them?
The next question, I think, needs an illustration to make sense, so here goes...

O=Outwitter
F=Friendly character to Target
Can the Outwitter outwit between the Target's Friendly characters? I know that two enemy characters adjacent on a diagonal create blocking terrain for ranged attacks but does that work the same for outwit?
Any help is appreciated.

Outwit requires LOF to function; adjacency has absolutely nothing to do with it. So if the Outwitting character can normally 'see through' Stealth (say, Ultimate Cap perhaps), then yes. Otherwise, no.

Again, LOF is required for Outwit to function. Under normal circumstances, you can not draw LOF between two characters, even on the exact diagonal given in your diagram. So Outwit would no function.
If you had someway to ignore the character bases for LOF (maybe the Outwitter is a Giant and can see over the characters, or you are using the feat Coordination), then it could work.
Actually, I knew the answer to the first question, and the second came up in a game this last weekend. I argued the point that you confirmed but my buddy thought otherwise. Thanks for clearing that up, Normal.

No outwitting characters in Stealth, even if adjacent, because Outwit requires line of fire, which Stealth blocks.
No to the second question as well. Friendly characters block line of fire for your Outwit just as they would block a ranged attack. If you could shoot between your own figures like that and your opponent couldn't you wouldn't need Trick Shot or Coordination.
But I have the sense to recognize that I don't know how to let you go...
