I am looking for the best SPiderman TPBs. (excluding the Ultimate line)
So far my list is
All the Marvel Masterworks
Kravens Last Hunt
Marvel Legends Mcfarlane
Spiderman Return of the sinister Six (I think its fun)
Spiderman Cosmic Adventure (Bad but fun)
Spiderman Death of the stacys
Spiderman nothing can stop the Juggernaut
The Death of Jean DeWolfe - Spidey and Daredevil in ethical conundrums. Earlyish Peter David, and when I read it as a kid I never saw the revelation of the villain's identity coming. These days I might, but only because I've learned from stuff like this.
I really like “Maximum Carnage” myself. Besides including one of my all time favorite characters (Venom), I got this while I was in the hospital while recovering from my kidney transplant, so it has special personal meaning to me…
Fixer of the Thunderbolts clan aka Bob

You may want to pass on the McFarlane stuff. Personally, I didn't see anything special in those.
The Spider-Man/Human Torch mini-series by Dan Slott was a lot of fun. Spider-Man Blue is fairly good as well, assuming you enjoy sappy romance. If you do, Spider-Man Loves Mary Jane is even better. Outside of that there aren't too many collected arcs I'd recommend. A lot of my favourite Spidey stories tend to be one-shot stories that usually get lumped together with others when collected.
I enjoyed the Marvel Knights Spider-Man 1-12 that Millar did a few years ago. I'm not sure how it is collected but it is really satisfying Spider-Man goodness.
Book of Ezekiel was also a really good read in my opinion. JMS and JRJR at their best.
But...Nightcrawler really has been my favorite character for years.
Anything by JMS is a great read; his vision of Spider-Man was refreshingly new while not killing anything a fan could love (Organic Webshooters not so scandelous vs. Mephisto!)
HUGE fan of Spider-Man: Blue. Any Gwen fans should read this one.
Ultimate Spider-Man is the most consistently good Spider-Man series out there. Not always GREAT, but definitely good throughout.
Not just Spidey, but Monsters Unleashed - the New FF is a lot of fun. Where Hulk, Wolverine, Ghost Rider, and Spider-man replace the FF for 3 issues. Art Adams did the penciling, so it's also easy on the eyes.
"Un-fun Dad, un-fun Dad,
He's so bad, he mak'a me mad
Un-fun Dad, un-fun Dad
He's a real cad, Un-fun Dad"

I'll also recommend The Alien Costume Saga - from when Spidey gets back from Secret Wars until he gets rid of the alien costume.
The black costume is still my favorite Spidey costume, and Hobgoblin is my favorite Spidey villain (who shows up a couple times in the arc). Also good as it's basically the precursor to Venom (why the suit hates him, and why Spidey hates the suit).

Let's not forget, it also features the always amusing Peter-in-a-Fantastic-Four-outfit-with-a-paper-bag-over-his-head costume. One I must get around to modding some day...
Marvel Knights Spiderman (Down Among the Deadmen, Venomous, The Last Stand) quite an interesting idea on the origin of villains explored.
These are the ones I was talking about.
Have you been reading current issues? If not, I recommend New Ways to Die as a TPB. I enjoyed the story and the art. And if you can pick up a Marvel Team Up anthology, I would do it. He had some great team ups back in the day.
