If for example: I ring my oppenent's Airnight Parashath, can they chain Enemy Controller, tribute their Airnight, take control of one of my monsters, and thereby make the damage from Ring of Destruction non-existant?
Ring of Destruction would destroy Airknight Parshath.
Player A: Rings Airknight Parshath
Player B: Chains Enemy Controller to Airknight Parshath
Ring of Destruction is set targeted towards Airknight already so in this case it would be destroyed.
It uses the same ruling as Creature Swap does.

You realize that the cost of actually playing the second effect of Enemy Controller is to tribute the monster . . . so how exactly would it still be destroyed?

I though he was talking about this effect "Select 1 face-up monster on your opponent's side of the field. Take control of the selected card until the End Phase of the turn this card is activated."
I though he was saying he is going to take control of Airknight Parshath.

No worries, this is one of the best places to learn the rules.
As long as you are willing to learn and can put up with the CONSTANT corrections being made to the thousands of rulings we have then you will go far.

you make that sound like a bad thing....
you'll either go far, or go insane, or start flipping tables...
It’s always best to remember things offered as costs are automatically taken care of at the activation of the effect. (Pg 36 of the Rule book for more info on costs)
In this case you activate the 2nd effect of enemy controller, this requires a cost tribute of one monster, and you MUST pay this at activation (Prior if you want to be technical)
So you Tribute off Airknight.
Also important to know that Chains resolve backwards. So the last thing activated in the chain will resolve first. Since Enemy Controller was the last thing activated it will resolve first. Ring will resolve last since it was activated first, but since its target is gone, it will not be able to destroy a monster or do any damage.
