Is it true that you can sacrifice tokens to bring out a monster? I know people that play like this however its a new thing to me so I thought I would ask and get this cleared up. So is it possible?

This depends very heavily on the tokens that are summoned.
A card like Scapegoat specifically says that the tokens that are special summoned may NOT be used to tribute summon a monster (Jinzo, Mobius or something of that nature). These tokens, however, may be used as tributes for other SPECIAL SUMMONS like Rituals, Fusion summons (we don't have this . . . yet), and Toon monsters. Toon monsters may use sheep tokens produced by Scapegoat because they are special summoned monsters and are not treated as tribute-summons.
If the card says ANYWHERE that the tokens can not be used for a particular type of effect or game mechanic, then you must abide by those rules.
If it does not have a written restriction about how it can or can not be used (like Stray Lambs) then assume that you can use it for a tribute summon.
This is why I will STRESS that you need to READ THE CARD.
Tokens are treated as monster's in every aspect EXCEPT for "sending to the graveyard," removing from play, returning to your hand or deck and such.
Unless a card specifically states "These tokens cannot be tributed for a Tribute Summon" then you may use them like that if you wish. Cards like Scapegoat DO say they cannot be used as Tributes for a Tribute Summon, but they CAN be used as Tribute "costs" for Special Summons like Toon monster's and Lava Golem and may be used as Tributes for effects such as Cannon Soldier, Hand of Nephthys and such.
Some cards with Tributable tokens for a Tribute Summon
Stray Lambs (though it'd have to be Set since you can't Normal or Special Summon in the same turn)

Cobra Jar
Statue of the Wicked
Vampire Orchis + Des Dendle
Insect Queen
Jam Breeding Machine
Physical Double (if they ever make a card to let it stay on the field)
Devil's Sanctuary (japanese)
Clone Duplication (japanese)

as for Physical Double, you could use it with Ultimate Offerings to legally tribute summon a monster during your opponent's Battle Phase.
I suppose you could do that...that's really the only way I can immediately think of...only other things I come up with tributing in mind is for activation costs.

Tribute a face-up "Kuriboh". Place a "Kuriboh Token" (Dark/Fiend/1/300/200) in every empty monster zone. The "Kuriboh Tokens" cannot be used as a Tribute for a Tribute Summon (or Set).
