If I use Wild nature on the great long nose, do I get to choose whether or not Great long nose comes back to my hand before Wild nature destroys it in the end phase ?

Yes you would. You control both effects and they both activate in the end phase. You could choose to return the monster to your hand, and then resolve Wild Nature's Release.
